Mango Sticky Rice Roll 🥭🥥 Ingredients: * 1 cup sticky rice (glutinous rice) * 1 cup + 2 tbsp water * 2 ripe mangoes, sliced * Rice paper sheets * Black sesame seeds (optional) Coconut Sauce: * 1 cup coconut milk * ¼ cup sugar * ¼ tsp salt Slurry: * 1 tsp cornstarch * 2 tsp water Instructions: 1. Cook the sticky rice with the water until tender. 2. In a saucepan, heat the coconut milk, sugar, and salt until the sugar dissolves (don’t let it boil). 3. Mix ⅓ cup of the coconut sauce into the cooked sticky rice. Let it cool slightly. 4. Mix the cornstarch with the water and stir it into the remaining coconut sauce. Cook until slightly thickened. 5. Soften a rice paper sheet in warm water. 6. Spread a layer of sticky rice in the center, add sliced mango, then roll tightly like a spring roll. 7.
