I saw a video saying that if you rinse your pre shredded cheese, it takes the powdery film off and melts the same as a block! Havent tried yet, but could be worth testing!

I have tried a few recipes, all with flour, and even tho my roux is cooked enough, I find it makes the dish tastes pasty. I think next time I will def make this truffle version (and cavatapi, bc of course), substitute in a bit of cream and then let it sit a bit before serving. Fingers crossed.
