1 year difference…same outfit & a thicker meal idea 🤤 SHORT RIB BAKED POTATO Ingredients For the Short Ribs: • 2 ½ lbs beef short ribs (bone-in) • @Loisa Sofrito • 1 tsp: black pepper, garlic powder, onion powder, paprika// 1/2 tsp: cumin & salt (for short rib rub) • 2 tbsp olive oil • 2 carrots, diced •1 onion, diced • 6 garlic cloves, minced • 2 tbsp tomato paste • 1 cup red wine • 3 cups beef stock • 2 sprigs fresh thyme • 2 sprigs fresh rosemary • 2 bay leaves • Salt & black pepper to taste (plus extra seasonings as needed) For the Potatoes: • 4 large russet potatoes • Olive oil (to rub skins) • Sea salt (for skins) For Garnish: • 1 cup shredded cheddar • ½ cup sour cream • 2 green onions, thinly sliced • Crispy fried onions or shallots (optional) • red onion, chopped • Fresh parsley, chopped METHOD 1. BRAISE THE SHORT RIBS 1. Preheat oven to 325°F (163°C). 2. Season short ribs generously with seasonings 3. Heat olive oil in a Dutch oven, sear ribs on all sides until browned. Bake at 400°F (204°C) for 50–60 min, until skins are crispy and insides fluffy. 3. BUILD THE LOADED POTATO 1. Split open hot potatoes, fluff insides with fork. 2. Layer in cheese so it melts into the potato. 3. Pile on short rib meat generously. 4. Drizzle with reduced braising sauce. 5.
