Stir in the tomato paste, Italian seasoning, and paprika. Pour in 4–6 cups chicken broth and bring to a simmer. Stir in the heavy whipping cream and sun-dried tomatoes, then add the shredded rotisserie chicken if using. Mix in the Parmesan and mozzarella cheese until melted. Add the gnocchi and cook for 3–5 minutes, or until tender. Stir in the spinach and cook for 1–2 minutes, until wilted.
