Puerto Rican style 🇵🇷 POLLO GUISADO 🍗🥔 (stewed chicken)  - 12 chicken drumsticks  - 1 tbsp adobo w/ cumin - 2 tsp dried oregano  - 2 tsp paprika  - 1 tsp onion powder - 1 tsp garlic powder - 1/2 tsp black pepper - 1 packet sazon  - 5 garlic cloves, smashed and chopped  - 1/2 C neutral oil - 1/4 C sofrito - 1 green bell pepper, chopped - 1 red bell pepper, chopped - 1 small yellow onion, chopped - 8 oz tomato sauce  - 1 maggi cube  - 2 1/2 C water - 3 russet potatoes, cut into pieces  METHOD: • Clean and prepare the chicken drumsticks. Soak in cold water with lemon juice, white vinegar, and salt. Rinse and pat dry. • Pole holes in the chicken and season with 1/2 C neutral oil, the above seasonings, and fresh garlic. Marinate for at least 3 hours for best taste.  • In a large skillet or pot, heat 2 tbsp neutral oil. Sear the chicken drumsticks on both sides. After searing, remove the chicken from the skillet and place into a bowl.  • In the same skillet on medium heat, add in 1/4 C sofrito. Cook down for about 30 seconds until fragrant and getting darker in color. • Add in the chopped bell peppers. Cook down for 1 minute. Then, add the chopped onion. Cook down the vegetables for 2-3 minutes.  • Add in the tomato sauce and maggi cube. Stir until maggi cube is dissolved.  • Add the chicken back into the skillet and pour water over top.  • Cover with a lid and let simmer on medium  heat for 20 minutes.  • Add in the potatoes. Cover and let simmer for an additional 20 minutes.  • After 40 minutes of cook time, check the thickness of the sauce. Continue to cook until you reach your desired consistency.  • Mix in 1/2 bunch of fresh cilantro (chopped) and remove from heat.  • Best served with white rice!
