Ingredients: • 2 lbs boneless pork sirloin roast, cut into chunks • ½ cup all-purpose flour (for coating) • 1½ tsp salt, divided • ¾ tsp black pepper, divided • 2–3 tbsp olive oil • 1 small onion, diced • 1–2 celery stalks, sliced • 1 tbsp tomato paste • 5–6 garlic cloves, whole • Fresh herbs (thyme, rosemary, sage) • 5 medium yellow potatoes, peeled and cut into chunks • 2 medium carrots, sliced • 3 to 3½ cups water (plus more if needed) Instructions: 1. Season the pork with 1 tsp salt and ½ tsp black pepper, then lightly coat with flour. Heat olive oil in a large pot or Dutch oven over medium-high heat. Sear the pork in batches until browned on all sides. 2. Return all the pork to the pot. Add the onion, celery, and tomato paste. Stir and cook for about 3 minutes to build flavor. 3. Pour in the water, then add the garlic and fresh herbs. Bring to a boil, reduce heat to low, cover, and simmer for 40–45 minutes, until the pork is tender. Add more water if needed to maintain some liquid. 4. Remove the herb stems. Add the potatoes and carrots, season with the remaining salt and pepper, cover, and continue simmering for 20–25 minutes, until the potatoes are soft and the sauce slightly thickens. 5.
