@matchaonomu: Matcha Tiramisu Matcha Syrup 🍃 12g matcha, more for dusting 💧 180g water (80°C) 🍬 30g granulated sugar 🍪 savoiardi or lady fingers, for soaking Mascarpone Filling 🐣 4 egg yolks (large) 🍬 50g granulated sugar 💧 30g water, room temp 🧀 250g mascarpone cheese 🍦 240g heavy cream, cold 1. Sift matcha to a bowl. Add hot water and whisk. Stir in the sugar until completely dissolved. Set aside. 2. Beat together egg yolks, sugar, and water in a heatproof bowl. Place the bowl over a pot of gently simmering water over low heat (make sure the bowl doesn’t touch the water). Continue mixing until it reaches 70–75°C. Remove from heat and keep beating until the mixture has tripled in volume. Set aside. 3. Whip mascarpone and heavy cream to medium-stiff peaks. Add the egg yolk mixture and fold until homogeneous. 4. Prepare an 8x8-inch pan (or a similar-sized container), the matcha syrup, ladyfingers, and mascarpone filling. 5. Dip each ladyfinger to the matcha syrup for 1 second on each side. Arrange them in a single layer at the bottom of the pan. 6. Spread half of the mascarpone filling evenly over the ladyfingers. Add another layer of soaked ladyfingers, then spread the remaining filling evenly on top. 7. Cover with plastic wrap and refrigerate overnight. 8. Dust with matcha before serving.
