CREAMY GARLIC PARMESAN CHICKEN & POTATOES 🤤 One of my go to dinner recipes! A delicious, healthy high protein meal for you to try. Save for later ☝🏼 •500 kcals per portion  •41g PRO, 61g CHO, 16g FAT Serves 2: -500g of potato -2 tsp of aromatic seasoning -Salt/pepper  -Oil spray  -Broccoli/broccolini  -200g of uncooked chicken breast -2 tsp of paprika -1 tsp of garlic powder -1 tbsp of olive oil  -1 red onion, diced  -2 cloves of garlic, minced  -1 reduced salt chicken stock cube mixed with 200ml of boiling water -30g of light creme fraiche -Dash of cream  -1 tsp of dijon mustard -Fresh parsley, chopped -4 tsp of parmesan  -Salt/pepper Method: 1. Wash the potatoes and slice into wedges. Par boil for 5 minutes. Season with aromat seasoning and pepper. Spray with oil and cook in the oven or air fry at 200°C for 20-25 mins until soft. 2. Boil the broccolini until tender. 3. Season the chicken breasts with paprika, garlic powder, salt and pepper. 4. Spray a pan with oil and add the chicken breasts. Cook on either side for 5-10 minutes. Remove from the pan and set aside. 5. On the same pan, add the garlic and red onion along with a dash of water. Fry until softened.  6. Pour in the chicken stock and add the creme fraiche along with a dash of cream (optional). Mix in the Dijon mustard. Add the chopped parsley. Season with salt/pepper. Let this simmer for 2 minutes.  7. Add back in the chicken and coat each side in the sauce. Simmer until the sauce thickens up. Sprinkle over 2 tsp of parmesan. 8. Serve the potatoes, broccolini, chicken and sauce into two portions. Top with another teaspoon of parmesan per portion.
