Add the chopped onion and sauté for about 5 minutes, until softened and lightly golden. Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant. Stir in the curry powder, cumin, turmeric, cinnamon, cloves, and cayenne pepper. Cook for 1 minute to bloom the spices. Transfer the onion-spice mixture to your slow cooker. Add the cubed beef, coconut milk, beef broth, tomato paste, and cubed potatoes. Stir well to combine. Season with salt and pepper to taste. Cover and cook on low for 6–8 hours, until the beef is melt-in-your-mouth tender and the potatoes are fork-soft. Before serving, garnish with chopped fresh cilantro for a vibrant, aromatic finish.
