dont use a knife.just break off what you need..I was in catering and this is how we did it to stop it browning

if you cut it with a metal knife it goes brown better to pull it apart

This used to do my head in until i got told to rip the lettuce off then cut it because the metal of the knife has a chemical reaction with the lettuce. It actually works. The kitchen roll method i do also.

I find it stays fresh if you just wrap the whole lettuce in foil and put it in the fridge

I leave mine whole and just use what I need it lasts longer I tried this once and it never worked it went brown within a couple of days
