Salsa Verde White Chicken Chili 🥣 I’ve been making some version of this white chicken chili for almost ten years now, and when I say this is my best version yet, I mean it. There are a few reasons why: First, I made the salsa verde from scratch this time, and yes, it really does make all the difference. It adds a freshness and depth that jarred versions just can’t quite replicate.  Second, I used chicken thighs instead of breasts. They stay so much juicier and bring a richness to the broth that makes the whole thing feel more complete.
