in Ukraine it's so popular that you can just go to the store and buy already gathered sap. we call it "birch juice" some people like to add sugar to it as well. pretty good stuff

This is so intriguing to me. Coming from outback Australia where there's very little rain, I'm used to trees that have extremely thick sap, many species crystallise on contact with the air. Amazing!
