Maple Bacon Glazed Bacon Fat Donuts Peak indulgence. Ingredients: Dough: 200ml milk 6g instant yeast 50g sugar 2 eggs 50g bacon fat 30g Butter melted 450g flour AP 400g streaky bacon Glaze: 50g butter 70g maple syrup 100g confectioners sugar 1/2t vanilla extract Method: Line a baking tray with baking paper or silicon mat, and cover with a tray so the rendered fat can drip through. Lay out bacon, and bake until very crispy and as much fat as possible has rendered out. Scrape the fat and crispy brown bits from the tray, and set aside for your donut dough. Hopefully you managed to get 50g of fat. Reserve 1/2 of the bacon for the donuts, and keep the remaining cooked bacon in the fridge for another recipe. For the Donut Dough, add all ingredients to the bowl of a stand mixer, and knead using the dough hook until the dough pulls from the side, around 10 minutes. You could also knead on the bench, adding a little flour to help it not stick. Allow to proof in a warm spot, covered with a damp towel until double in size. Lightly flour, or oil your bench. Punch down donut dough, then transfer to the bench and roll out 1cm thick. Cut out desired donut shape, transfer to a proofing tray covered loosely with cling film, and allow to proof until puffy. Chop or blitz bacon for topping the donuts into small pieces. Make the glaze by whisking all ingredients together. Heat frying oil to 180 degrees. Fry donuts you achieve a deep brown on each side, flipping as you go to ensure an even cook. Allow to cool for 2 minutes, then dunk donuts in the glaze, and sprinkle with the bacon bits.
