2 1/3 cups all-purpose flour 280g
1 1/2 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 cup granulated sugar 200g
¼ cup unsalted butter melted/ cooled 56g 1/4 cup vegetable oil 60ml
2 tablespoons lemon zest
2 large eggs room temperature
1 tablespoon vanilla extract 3/4 cup sour cream 180g
1/4 cup whole milk 60ml
3 tbsp lemon juice 1 1/2 cups blueberries fresh or frozen, divided 210g Streusel topping:
1 1/4 cup all-purpose flour 150g 1/2 cup packed light brown sugar 110g 1/4 cup granulated sugar 50g
1 1/2 tsp cinnamon optional 1/4 tsp salt 1/2 cup unsalted butter melted and cooled Lemon glaze: 1 cup powdered sugar 2 tbsp lemon juice 1 tbsp melted cooled butter Pinch of salt Bake at 425F for the first 10 minutes. Made these today but subbed sour cream for Greek yogurt. I used the recommended cups but also ended up measuring them on the scale. Not sure if it was just me but mine were a little off from the g/ml in the caption but nevertheless, these were delicious. They also made way more than 12. Mine made about 22 regular sized muffins.
