Cook and boil rice according to packet instructions.  2. For the smashed cucumber, use your fist to smash them down and then chop into smaller chunks. Transfer to a bowl and season with salt. Let this sit while you prepare the rest of the meal. 3. For the pickled onion (I had this pre made), bring a pot of water, white wine vinegar, sugar and salt to a low simmer and stir until everything is dissolved. Thinly slice the red onion, place in a bowl and pour over the liquid. Let this sit for at least 30 minutes. Store the rest in an air tight container in the fridge.  4. Heat a pan on medium heat. Add the mince, break down and cook until browned. Add garlic and fry for 2-3 minutes. Then, add in the red pepper and fry again for another 5 minutes.  5. Mix the sauce ingredients together.  6. Pour the sauce into the pan along with 100ml of water and the cornflour slurry. Let this simmer for 10 minutes or until the sauce has thickened. 7. For the smashed cucumber, drain the excess liquid from the bowl. Then, add the soy sauce, chilli oil, white wine vinegar and sugar. Mix well.  8. Divide the rice and mince into four portions.
