Let it gently simmer until the tomatoes break down and the sauce thickens and reduces. 5. Grate the cheddar and mozzarella cheese evenly over the top. Cover the skillet with a lid for a minute or two just until the cheese is beautifully melted. 6. Serve warm in a bowl over cauliflower rice. Top generously with avocado, cherry tomatoes, fresh cilantro, a dollop of Greek yogurt, and a big squeeze of lime juice.
