Slice the Chinese broccoli on a bias and separate the rice noodles into long strands. Toss noodles with dark soy sauce.  In a small bowl, whisk together 3 eggs, set aside. In another bowl, combine all the sauce ingredients, mix well and set aside. Heat 2 tbsp oil in a wok over high heat. Stir-fry the shrimp and scallops for 2–3 minutes, add the imitation crab, cook 1 minute more, then remove and set aside. Add 1 tbsp oil and sauté the garlic until fragrant. Add the Chinese broccoli and cook 1–2 minutes until vibrant green. Push everything to one side, add another 1 tbsp oil, and scramble the eggs until cooked. Add the noodles and let them char for 2–3 minutes. Pour in the sauce and gently toss to coat.
