Banana Bread with Homemade Oat Flour & Avocado Oil Makes: 1 loaf (8x4 or 9x5 pan) Prep time: 10 min Bake time: 45–55 min ⸻ Ingredients • 2 cups homemade oat flour (blend rolled oats until fine) • 1 tsp baking soda • ½ tsp baking powder • ½ tsp salt • 1 tsp cinnamon (optional) • 2–3 ripe bananas, mashed (about 1 cup) • 2 eggs • ¼ cup avocado oil • ¼ cup maple syrup, honey, or coconut sugar • 1 tsp vanilla extract • 2–3 tbsp milk (only if batter is too thick) Optional Add-ins: • ½ cup chocolate chips, nuts, or berries • Sprinkle of oats or cinnamon sugar on top before baking ⸻ Instructions 1.
