Tahiri @canarybasmati Ingredients: - 2 onions - 10 chilies - 3 tomatoes - 1 kg lamb pieces bone in - 2 cups of basmati rice - 4 tbsps ghee - salt to taste - 1 tbsp ginger paste - 1 tbsp garlic paste - 1 tsp turmeric - 1 tsp chili powder - 4 cardamom pods - 2 cinnamon sticks - 3 bay leaves - 3 cloves - 5 to 6 cups of water - start by thinly slicing the onions. The chilies and cube the tomatoes. - sauté the onions in 2 tbsps of ghee till they wilt and take a golden color for about 5 minutes. - add the ginger and garlic paste. The lamb and spices. Then sear everything on high for 5 minutes till the aroma fills the kitchen. - add the water and let the lamb cook on medium for about an hour and a half or till nice and tender. - meanwhile wash and soak 2 cups of @canarybasmati for 30 minutes in Luke warm water. Basically hot but you can touch it with your hands. - once the meat is tender. Add the tomatoes. Chilies and the soaked rice to the pot. If the water level is too low just add enough water to be a finger tip above the rice. - let it boil uncovered for 6-7 minutes till you see the rice blooming and soaking the stock. Then drop the heat to the lowest possible. Cover and let it cook for 30 minutes. - leave the lid shut for another 20 minutes to get a nice fluffy rice. - gently scoop the rice and lamb on a serving plate. Top it with the larger lamb pieces. The tomatoes and chilies. Serve it with a side of raita and enjoy. #food #cooking #india #indianfood #spicy
