A low-calorie, high-satiety Japanese-inspired stir-fry using shirataki noodles and tofu, packed with vegetables. Ingredients: - 200g shirataki noodles - 150g firm tofu, cubed - 1 cup sliced shiitake mushrooms - 1/2 cup julienned carrots - 2 cups spinach leaves - 2 tbsp soy sauce (low sodium) - 1 tbsp sesame oil - 1 clove garlic, minced - 1 tsp grated ginger - 1 tsp rice vinegar - Sesame seeds for garnish Instructions: 1. Drain and rinse shirataki noodles thoroughly under cold water. 2. Heat sesame oil in a wok or large skillet over medium heat. 3. Add minced garlic and grated ginger, sauté for 30 seconds until fragrant. 4. Add cubed tofu, cook until lightly browned, about 5 minutes. 5. Add shiitake mushrooms and julienned carrots, stir-fry for 3-4 minutes. 6. Add drained shirataki noodles and spinach, stir well. 7. Pour soy sauce and rice vinegar over the mixture, cook for another 2-3 minutes to combine flavors. 8.
