If you roast your beets in the oven instead of boiling, your salad will be even more delicious! Just wash the beets, put on a cookie sheet over parchment paper, cover with parchment paper to ensure complete seal and bake at 400 degrees for an hour / hour and 15 minutes for large ones. I usually stick them into the oven overnight, they cool beautifully before I get up and I have no mess, no need to check the water level and the taste is out of this world! You can use those for ALL beets salads! Thank you for your lovely recipes! 🥰

add sugar and raspberry vinegar to the water when boiling beets. when boiled, rub a cloth on them and the peels come straight off. they won't taste like dirt

Ok Diana I need you to be my hero. Went to a work potluck and my Russian coworker brought some type of cold beer salad that looked like this but it had shredded carrots and some type of smoked fish in it!! Can you make that?! Or tell me what it is so I can recreate? I dream about it ❤️❤️🙏🏽
