🇬🇧 Fish & chips… but no soggy bizniz! All this triple-cooked chips crap is long. Boiled then fried is waaay better🤓 Crispy outside, fluffy inside and the tartar sauce is the cherry on top. Ingredients: Fish: Cod or haddock Maris Piper potatoes (as many as you want bruv) Batter: 5 tbsp self-raising flour 1 tsp salt ½ tsp turmeric Sparkling water Tartar Sauce: 300g mayo 1 tbsp fresh dill 1 tbsp parsley 1 garlic clove (finely chopped) ½ tbsp onion (finely chopped) 1 tbsp gherkins (chopped) 1 tbsp capers (chopped) 1 tsp yellow mustard 2 tsp white vinegar 1 tsp black pepper 1 tsp MSG Method👇 1️⃣ Chop potatoes into thick chips and boil until they start going flaky. 2️⃣ Steam dry and fry at 170°C until golden. (I reheated mine in the air fryer while the fish cooked and they became even more kwithpy) 3️⃣ Mix the tartar sauce ingredients together and set aside. The longer it sits the better it gets. 4️⃣ For the batter, mix the dry ingredients then slowly add sparkling water (if you rush it, it’ll be lumpy). You want it smooth and slightly runny. 5️⃣ Pat the fish dry, coat in plain flour, dip into batter and fry at 170°C for around 5 mins or until golden. Normally I’d drown this in salt & vinegar but the tartar sauce already has a nice tang. #fyp #fishandchips
