Dice the chicken breast and add to a bowl. Marinate with 1 tbsp each of the soy sauce. Let sit for 10 minutes. Then, crack in the egg and mix well. 2. Season the cornflour with salt/pepper. Dip each piece of chicken into this (shake off excess egg before) and place in the air fryer at 180°C for 20-25 minutes until crispy. 3. Cook and boil rice. 4. Mix the sauce ingredients together until smooth. 5. Heat a pan on medium heat. Toast the cashew nuts on the pan until slightly browned and remove once done. 6. To the same pan, add the onion, peppers and garlic along with a dash of water. Fry for 5 minutes and add a dash of water to soften. 7. Pour in the sauce. Bring to a boil then reduce the heat to simmer. 8. Add the cooked chicken and half of the cashew nuts and mix well. Simmer for 5 minutes. 9.
