Try with just a little liquid next time, the meat will create a load of juice as it cooks. Also if that slow cooker has a browning / saute function chuck it on at the end of the cook with the lid off to reduce that liquid a bit while you prep.

I use the chipotles in adobo sauce with chicken and it’s good to take the meat out and the blend the sauce and add meat back in!
