Carefully roll each row into a rose shape and place it inside the muffin tin. Add a few extra potato slices around the outside when needed to create fuller roses. 5. Cover the muffin tin loosely with foil and bake for around 30 minutes. Remove the foil and bake for another 20–30 minutes, until the potatoes are completely tender in the middle and deeply golden and crispy around the edges. 6. Mix the Greek yogurt, garlic, Dijon, lemon zest, chives, salt and pepper until creamy. 7. Let the potato roses rest for 5 minutes, carefully lift them out of the tin and serve them warm with the dip.
