Kathleenscravings.com * 1 medium very ripe banana * 2 tbs white granulated sugar * ¼ tsp ground cinnamon * 1 tbs unsalted butter, melted. Plus extra butter for greasing. * 1 egg yolk * ½ tsp vanilla extract * ¼ cup all-purpose flour * ¼ tsp baking soda * ¼ tsp kosher salt 1. Prep - Preheat the oven to 350 degrees F and grease a ramekin with butter. My ramekin is 1 ounces to very top and about 4.25 inches diameter across the top. 2. Mash the banana with a fork in a medium bowl. Mix in the sugar and cinnamon with the fork until well combined. 3. Add the melted butter, egg yolk, and vanilla - mix well. 4. Stir in the flour, baking soda, and salt until just combined. 5. Pour into the greased ramekin and bake for 25-30 minutes until golden brown on top and a toothpick comes out with just moist crumbs, no wet batter. 6. Remove from the oven and cool slightly before eating. The banana bread is easiest to remove from the ramekin when still warm. #onebananarecipe #smallbatch
