Viral Rice Paper Mochi 🍡 easy high-protein dessert that’s perfect for summer!  Ingredients: * 6 rice paper sheets * 3 single-serve high-protein Greek yogurts (I used coconut, vanilla, and peach) * 1 mango, diced * Strawberries, diced * Blueberries * Tapioca flour, cornstarch, or powdered sugar for coating Directions: 1. Dice the mango and strawberries. Set aside a few blueberries as well. 2. Stir the diced mango into the coconut yogurt. Stir diced strawberries into the peach yogurt. Roll the mochi in the tapioca flour, cornstarch, or powdered sugar to prevent sticking. 7. Repeat with the remaining rice paper and yogurt mixtures until you have 6 mochi. 8. Place them on the prepared parchment-lined baking sheet and freeze for 30 minutes to 1 hour, or longer if you’d like them more frozen. 9.
