Make the Mash 1. Bring a large pan of salted water to the boil, crumble in the chicken stock cube and stir to dissolve. 2. Add the potatoes and boil for 18–20 minutes, or until fork tender. 3. Drain well and leave to steam dry for 1–2 minutes. 4. Mash with the butter and warm milk until smooth. Season to taste and keep warm. 2. Make the Mushroom Sauce 1. Heat the butter and olive oil in a frying pan over medium heat. 2. Add the finely chopped mushrooms and cook for 8–10 minutes, stirring occasionally, until golden and most of the moisture has evaporated. 3. Stir in the garlic, thyme sprigs, salt and pepper and cook for 1 minute until fragrant. 4. Pour in the beef stock and simmer for 5–7 minutes, allowing it to reduce by around half. 5. Stir in the cream cheese (or double cream) and Dijon mustard until smooth. 6. Remove the thyme sprigs and simmer for a further 2–3 minutes, or until the sauce reaches your desired consistency. If it’s too thick, add a splash more stock or cream. 3. Cook the Steak 1. Pat the steaks dry and season generously with salt and pepper. 2. Heat the oil in a frying pan over high heat until smoking hot. 3. Add the steaks and cook for 2½–3 minutes on the first side. 4. Flip and cook for a further 2–3 minutes for medium-rare. 5. Add the butter, garlic and thyme, then baste continuously for the final 1 minute. 6.
