Heat a large skillet or wok over medium-high heat and add 1 tbsp cooking oil. Stir-fry the sliced onions for 1-2 minutes until they start to soften. Add diced aubergine and cook 3-4 minutes until it begins to brown. Toss in zucchini and green beans, stir-frying 3-4 more minutes until tender-crisp. Add chickpeas and stir to combine.
