Serves 6 5 ingredient version: 1 pound lean ground beef 1 packet taco seasoning (bonus ingredient) 3 cups cooked lentil (canned, or other type of bean) 1 large can red enchilada sauce 15-18 corn tortillas cut into 1 inch squares 2 cups shredded cheddar cheese My made from scratch version: 1 pound lean ground beef 2 TBS all purpose seasoning (see previous video) 2 TBS chili powder 1/2 TBS ground cumin 1 Ancho Chile, seeded 2 guajillo chiles, seeded 1 Arbol chile, seeded 1/2 a small onion 3 garlic cloves 1 15oz can diced tomatoes with the juice 3 cups cooked lentils 15-18 corn tortillas, cut into 1 inch squares 2 cups shredded cheddar cheese (To make homemade enchilada sauce; simmer the dried Chiles, garlic and onion until soft. Blend with canned tomatoes until smooth) Preheat your oven to 375. In an oven safe skillet, brown your hamburger meat and add your seasonings. Cook the spices for 2 minutes and then add your enchilada sauce. Stir in your cooked or canned lentils. Then, fold in your tortilla pieces.
