Chicken Kebab Flatbreads 😮‍💨 
One of my absolute fave summer dinners, these are quick, easy, and taste unreal . Ingredients (serves 2): 200g thinly sliced chicken breast  1 tsp ground cumin 1 tsp ground coriander  1 tsp smoked paprika Pinch of salt 1 small onion grated  1 heaped tsp chopped garlic  50g low fat natural yoghurt  Tbsp tomato puree  1 and ½ tbsp lemon juice  Garlic sauce: 60g 0% fat thick greek yoghurt (I used Tesco Finest) ½ tsp chopped garlic  Tsp lemon juice  Pinch of salt 1 tbsp water to loosen  To assemble:  120g frozen crispy fries (I use McCain crispy skin on) ½ tsp smoked paprika  2 flatbreads (I used the Lebanese ones from Deli Kitchen) 80g shredded lettuce 1 tomato sliced  ½ small red onion sliced  Tbsp sriracha chilli sauce  💕Season the chicken with the cumin, coriander, smoked paprika and salt. Then add the grated onion, along with the garlic, yoghurt, tomato puree and lemon juice. 💕Mix well to combine. Cover and leave to marinate in the fridge for as long as you can 💕When you are ready to cook, toss the fries with the smoked paprika before cooking according to packet instructions. 💕Next, heat a large pan over medium heat. Add the chicken into the pan, ensuring it is not overlapping.  💕Fry for 8-9 minutes until cooked through.  💕Whilst the chicken cooks, make the sauce with the ingredients listed and set to one side.  💕Next, grill the flatbreads according to packet instructions.  💕Once the chicken is cooked, spread ½ of the garlic sauce on the bottom of the flatbreads. 💕Top with the shredded lettuce, tomato, red onion, chicken and fries  💕Drizzle over the remaining garlic sauce, along with the sriracha before serving.
