A whole cucumber... inside kimbap? 😌 🥒 Another Day, Another Oi — Episode 2. A series where I share fun cucumber recipes 🥒  This is the kind of kimbap I want to keep eating all summer 🤭 Cucumbers are naturally round and kimbap-shaped, so why not stuff them with your favorite filling instead of slicing them? I made half with tuna mayo and the other half with wasabi crab mayo, but you could really fill them with just about anything. I also gave the cucumbers a quick pickle first, so they have that slightly sweet, tangy flavor that reminds me of the danmuji in kimbap. Paired with the seasoned rice and egg, every bite still tastes like classic kimbap, just in a really fun new format. Another unexpected bonus? Using a whole cucumber actually makes rolling easier. Since it‘s already round and wrapped in an egg sheet, everything stays in place and gives you such a pretty cross-section. One little tip: I laid my gim lengthwise instead of the usual way so the cucumber fit better. It was still a tiny bit longer, but I don’t usually eat the ends anyway, so it worked perfectly 🙌 I already can‘t wait to remake these with different fillings. What combination should I try next? 🥒🤍 🥒 Whole Cucumber Stuffed Kimbap - Rice 2 cups cooked rice 1½ tsp salt 1½ Tbsp sesame oil 1 Tbsp sesame seeds Mix together. - Quick-Pickled Cucumbers 4 Korean cucumbers* Per cucumber half ½ Tbsp salt ½ Tbsp sugar 1 Tbsp vinegar *I used Korean cucumbers because I found them at my local Korean market. If you can’t find them, line up 2 Persian cucumbers end to end instead.  Cut each cucumber in half lengthwise and scoop out the seeds. Add the salt, sugar, and vinegar, then let sit for 20–30 minutes.
