Mini churros •1 cup water •6 tbsp butter •3 tbsp sugar •1/2 tsp salt •1 cup all-purpose flour •2 eggs •2 tsp vanilla extract •neutral cooking oil for frying •chocolate dip Coating: •1/4 sugar •2 tbsp cinnamon Start by heating 1 cup of water and 6 tablespoons of butter in a skillet over low-medium heat until the butter is fully melted. Stir in 3 tablespoons of sugar and 1/2 teaspoon of salt until combined. Gradually sift in 1 cup of all-purpose flour, mixing continuously until the dough comes together into a smooth paste. Transfer the dough to a mixing bowl and let it cool slightly before adding the eggs and vanilla extract. Mix until the dough becomes smooth and fully incorporated. Transfer the churro dough to a piping bag fitted with a star tip. Heat neutral cooking oil to 350°F, then carefully pipe 2-inch pieces of dough directly into the hot oil, cutting the ends as you go. Fry the churros until lightly golden brown and crisp, then remove and drain on paper towels. For the coating, combine the sugar and cinnamon in a bowl, then toss the warm churros until evenly coated.
