Chicken fajita wrap with creamy sauce Recipe 4 large flour tortillas 1 cup grated mozzarella cheese Fresh cilantro, chopped chicken breasts, cut into bite-sized pieces or strips 1 yellow bell pepper, sliced 1 red bell pepper, sliced (any color would do) 1 medium onion sliced 1–2 tbsp tomato paste Juice of 1/2 lime 2–3 tbsp oil (olive, avocado, or vegetable) 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp oregano 1/2 tsp cumin Salt to taste Black pepper to taste 1 tsp cayenne pepper fries for extra filling (optional) (Adjust all seasonings according to taste) Sauce 2 tbsp sour cream 2 tbsp mayonnaise 1 tbsp of above seasoning used for chicken 1 tbsp lemon juice 2-3 tbsp water (to thin out the sauce) Method Add the chicken to a bowl along with the oil, seasoning,lime juice and tomato paste. Mix well and marinate for at least 30 minutes, or up to an hour for more flavour. Heat a drizzle of oil in a frying pan over medium heat, then cook the marinated chicken over medium heat. Stir occasionally until the chicken is fully cooked and lightly browned around the edges, about 8–10 minutes. In the same pan, add a bit more oil if needed, add the sliced onion and peppers, season lightly with salt, pepper, garlic powder and cook while stirring occasionally until softened but still slightly crisp, about 6–8 minutes. Remove from the pan and set aside. Warm the tortillas in the microwave until soft and pliable, keep covered to stay warm. Place a tortilla on a plate and spread a spoonful of sauce in the centre.Add a layer of cheese, then the cooked vegetables,chicken and some fries. Sprinkle over chopped cilantro and drizzle with more sauce if desired. Fold in the sides of the tortilla and roll it up tightly. Place seam-side down in a lightly oiled pan over medium heat and cook until golden and sealed on both sides. #DinnerIdeas #easydinner #quickdinner #chickendinner #weeknightdinners
