Recipe Name Classic Slow Cooker Pot Roast with Vegetables Ingredients 1. 3–4 lb beef chuck roast 2. 2 tbsp olive oil 3. 4 medium potatoes, peeled and quartered 4. 4 large carrots, peeled and cut into chunks 5. 2 large onions, chopped 6. 4 garlic cloves, minced 7. 2 cups beef broth 8. 2 tbsp Worcestershire sauce 9. 1 tbsp tomato paste 10. 1 tsp dried thyme 11. 1 tsp dried rosemary 12. 1 tsp smoked paprika 13. 1 tsp salt 14. 1 tsp black pepper 15. 2 tbsp cornstarch + 2 tbsp water (optional) Recipe 1. Season the chuck roast with salt, pepper, paprika, thyme, and rosemary. 2. Heat olive oil in a skillet and sear the roast on all sides until deeply browned. 3. Place the potatoes, carrots, onions, and garlic in the bottom of the slow cooker. 4. Lay the seared roast over the vegetables. 5. Mix beef broth, Worcestershire sauce, and tomato paste until smooth. 6. Pour the mixture around the roast. 7. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours. 8. Once the beef is fork-tender, remove it carefully and let it rest for 10 minutes. 9. Transfer the vegetables to a serving platter. 10. If desired, whisk the cornstarch slurry into the cooking liquid and cook until thickened. 11. Slice or shred the roast and spoon the rich gravy over the meat and vegetables. 12.
