Broccoli & Cauliflower Cottage Cheese Bake 🥦🧀 A cheesy, high-protein vegetable casserole that's great as a side dish or a light main course. Ingredients 4 cups broccoli florets 4 cups cauliflower florets 1 tablespoon olive oil 1 small onion, finely diced 3 cloves garlic, minced 2 cups cottage cheese 2 large eggs 1 cup shredded sharp cheddar cheese, divided ½ cup grated Parmesan cheese 1 teaspoon Italian seasoning ½ teaspoon onion powder ½ teaspoon salt ¼ teaspoon black pepper 1 tablespoon chopped fresh parsley Instructions Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish. Steam or blanch the broccoli and cauliflower for 3–4 minutes. Drain well and pat dry. Heat olive oil in a skillet over medium heat.
