Authentic Peshawari Chapali Kabab Peshawari Chapli kabab is a traditional Pashtun dish originating from the city of Peshawar in Pakistan. Ingredients: * 1 kg Lamb Mince (25% fat) double minced * 3 Tomatoes, chopped * 2 1/2 tsp Salt, or to taste * 1 1/2 cups Fresh Coriander * 3 medium Onions * 4 Garlic cloves * 1 inch Ginger * 5-6 Green Chilies * 1 tbsp Zeera (Cumin seeds) * 1/2 tsp Ajwain (Carom seeds) * 2 1/2 tbsp Coriander seeds * 2 1/2 tbsp Pomegranate seeds * 2 tsp Red Crushed Chilies * 1 tsp Zeera powder (Cumin powder) * 1 tsp Coriander powder * 1 tsp Garam Masala * 1/2 tsp Black Pepper * 1 tsp Red Chili powder * 2 tbsp Cornmeal (Makai ka atta) basin or plain flour * 3 Eggs, scrambled with some oil * 1 cup Oil for frying 1. Prepare Onion Mixture:     * In a chopper, blend ginger, garlic, and green chilies until minced.     * Add onions and pulse until chopped. Strain excess water using hands or a cloth. 2. Prepare Spice Mix:     * In a spice grinder or in mortar and pestle, roughly crush Zeera, Ajwain, Coriander seeds, Pomegranate seeds, and red crushed chilies. Set aside. 3. Combine Ingredients:     * In a large bowl, knead the lamb mince with salt and chopped tomatoes for roughly 2-3 minutes.     * Add the crushed spice mixture, Zeera powder, Coriander powder, Garam Masala, Black Pepper, Red Chili powder, cornmeal (basin or plain flour), and scrambled eggs. Mix well.     * Add the strained onion mixture and fresh coriander to the meat mixture. Mix thoroughly for 5-6 minutes until all ingredients are well combined.     * Cover the mixture and refrigerate for minimum 2 hours.     * Take portions of the mixture and shape them into kababs. I have made 4 large kababs. Choose any size you like.     * Top each kabab with a layer of scrambled egg and tomato slices. 4. Cook:     * Heat a large skillet over medium heat and add oil.     * Cook the kababs over medium heat - cooking on too low a heat can dry out the kababs, and too high a heat can burn them.     * Cook the kababs until golden brown and cooked through, about 4-5 minutes per side.     * Serve hot with naan, salad, green chilies, and chutney. Squeeze lemon juice over the kababs before enjoying!
