CREAMY SATAY PROTEIN POWER BOWL I love a big saucy salad and this one packs in 50g of protein and HALF your fibre needs. Tastes a little like a rice paper roll with peanut dipping sauce. So filling, but still fresh, crunchy and super satisfying. Serves 1 Approx. 535 kcal, 50g protein, 14g fibre Ingredients 1 heaped tbsp Greek yoghurt 1 tsp peanut butter 1 tbsp soy sauce 1 tbsp rice vinegar or lime juice 1 tbsp sriracha 1 tsp honey 2 spring onions, sliced ½ cucumber, sliced 100g butter beans ½ avocado, diced A handful of fresh mint (a must!) 2 tbsp edamame 100g cooked chicken breast, sliced or shredded Method Add the yoghurt, peanut butter, soy sauce, rice vinegar or lime juice, honey and sriracha to the base of a mixing bowl. Whisk together until creamy. Add the spring onions, cucumber, butter beans, avocado, mint, edamame and cooked chicken. Toss everything together until coated in the creamy satay dressing.
