Elote Loaded Sweet Potatoes 🌽🍠❤️🔥 [~430 cals 39g protein] - For more recipes like this, checkout my cookbooks in my bio 👀💖 - ✰ 4 sweet potatoes - Brushed with 1 tbsp low fat butter and salt ✰ 22 oz roasted corn ✰ 1 cup (227g) 0% greek yogurt ✰ juice from 2-3 limes ✰ diced onion and jalapeño - the more you use the spicier it’ll be ✰ 2 oz cotija cheese ✰ elote seasoning ✰ cilantro ✰ 16 oz extra lean ground beef (96/4) - garlic powder, onion powder, paprika, chili powder, salt and pepper ✰ optional tajin, cotija cheese and cilantro for topping 1. Puncture holes in sweet potatoes with a fork then brush with butter and salt. 2. Airfry or bake sweet potatoes at 350F for about 50-60 minutes or until soft. It sounds like a long time but it’s worth it and you can do other things while they bake LOL! 3. On a pan on high, cook ground beef with seasonings. 4. To make elote mixture, combine corn, greek yogurt, lime juice, diced onion and jalapeño, 2 oz cotija cheese, elote seasoning, cilantro. 5. When potatoes are ready, split them in half then add ground beef, elote mixture and toppings. 6. Enjoy! - Nutrition : Please note that calories will vary based on size of sweet potato.
