I hope you enjoy! 🫶🏻 / AD Ingredients:  - 130g dark chocolate (i used 52%) (3/4 cup) - 80g unsalted butter (6 tablespoons) - 40g granulated sugar (1/4 cup) - 80g dark brown sugar (1/3 cup + 1 teaspoon) - 1 egg + 1 egg yolk - 1 teaspoon vanilla extract - 50g all purpose flour (1/3 cup + 1 tablespoon) - 35g cocoa powder (1/3 cup + 2 tablespoons) - 1/2 teaspoon fine sea salt - 50g crushed butter biscuits or graham crackers (1/3 cup + 1 tablespoon) - 1 teaspoon baking powder - 50g milk chocolate chips or chunks (1/3 cup) Extras: - 8 butter biscuits or graham crackers  - 8 large marshmallows - 100g milk  hcocolate for topping the biscuits  Instructions: 1. Melt the dark chocolate and butter in a saucepan over medium heat, whisking continuously. Alternatively, melt them in a heatproof bowl using the microwave or a double boiler. 2. Set aside to cool slightly. 3. In a small bowl, whisk together the flour, baking powder, salt, cocoa powder and crushed graham crackers. Set aside. 4. In a large bowl, beat the granulated sugar, brown sugar, egg and egg yolk until the mixture looks light and fluffy, about 1-2 minutes. An electric hand mixer works best here. 5. Next, pour in the cooled melted chocolate along with the vanilla extract and mix until smooth. 6. Add the dry ingredients and gently fold everything together without overmixing. 7. Lastly, mix in the milk chocolate chips or chunks. 8. Cover and refrigerate for 30 minutes. 9. After 30 minutes, line a small tray with parchment paper and scoop 8 equal portions of dough onto it. 10. Cover and refrigerate for an additional 60 minutes. 11. After chilling, preheat your oven to 180°C (conventional) or 160°C (fan-assisted). 12. Place a butter biscuit or graham cracker on the baking tray, add some chocolate on top, and finish with a marshmallow. 13. Take each chilled cookie dough portion, flatten it into a disc, and wrap it around the marshmallow center. 14. Bake for 10-12 minutes for a soft, brownie-like cookie. 15.
