Mix it really well until combined. Divide the mixture into 6 sections. Spray a large muffin tin with olive oil. Cut 3 brioche buns in half and press each bun half into the muffin holes using a glass. Grab mozzarella and cut into 6 pieces. Fill each muffin tray with ¾ full of the beef mixture. Press a piece of mozzarella into the middle and cover with a little more beef. Top with a slice of onion, spray lightly with olive oil and bake at 200°C for 15–20 minutes or until golden and cooked through. Serve hot with your favourite burger sauce or tomato sauce for dipping.
