Add 4 eggs and the sugar, then whisk until the mixture is smooth and well combined. 3. Sift the flour, cocoa powder, coffee and baking powder, then add them to the mixture. 4. Mix well until you get a smooth batter with no lumps. 5. Pour the batter into a prepared cake pan and bake at 150°C for 50–55 minutes. 6. If the cake looks baked on top but is still soft inside, cover it with a piece of aluminum foil and continue baking until it is fully cooked inside. 7. When the cake is completely cooled, carefully flip it upside down onto a plate or rack. This means turning the cake over so the bottom of the cake becomes the top. This helps create a flatter and smoother surface, which is perfect for pouring the ganache on top. •Ganache 1. Heat 300 ml of whipping cream until it is very hot (do not let it boil). 2. Pour it over 350 g of chopped chocolate. 3. Stir until the chocolate melts and the mixture becomes smooth and glossy. 4. Pour the ganache over the cake. 5.
