Ricetta delle mie linguine con i totani (per 2 persone) Ingredienti: • almeno 200 g linguine sennò fai la fame • 300 g totani puliti (6 totani) • 1 spicchio d’aglio • Limone • Olio extravergine d’oliva, sale, pepe • Prezzemolo (io non lo avevo ho messo delle erbette a caso) • Vino bianco (un giro) Procedimento: Prenditi un’oretta per pulire i totani (no dai mezz’ora ti basterà se sei veloce). Scalda olio e aglio tritato, aggiungi i totani (gambe a ragù e teste a rombi) e dopo 2 minuti da soli alza la fiamma e sfuma con un po’ di vino bianco. Fai andare 3/4 minuti. Grattaci dentro un po’ di limone che fa la differenza. Cuoci ma non troppo, i totani non devono diventare duri. Metti le linguine a bollire, toglile quando mancano 2/3 minuti di cottura, tieni un po’ d’acqua di cottura e poi saltale nel sughetto finché non si amalgama tutto.
