Cook the protein pasta according to package directions. Reserve 1 cup pasta water, then drain. Blend the cottage cheese until smooth. 2.) Cook the ground beef, onion, and bell pepper until browned and softened. Stir in the taco seasoning. 3.) Add the pasta, blended cottage cheese, cream cheese, cheddar cheese, and salsa.
