Ingredients For the Chicken and Potatoes • 2 lbs boneless, skinless chicken thighs, cut into large pieces • 1½ lbs baby red or Yukon Gold potatoes, quartered • 1 small onion, chopped • 1 tbsp olive oil • 1 tsp paprika • 1 tsp Italian seasoning • 1 tsp garlic powder • ½ tsp onion powder • ¾ tsp salt • ½ tsp black pepper For the Garlic Parmesan Sauce • 4 tbsp butter, melted • 5 cloves garlic, minced • ½ cup chicken broth • 1 tbsp Dijon mustard • 1 tsp dried parsley • ½ cup freshly grated Parmesan cheese • 1 cup shredded mozzarella cheese • 2 tbsp chopped fresh parsley Instructions 1. Lightly grease a 6-quart slow cooker with cooking spray or butter. 2. Add the quartered potatoes and chopped onion to the bottom of the slow cooker. 3. In a large bowl, toss the chicken with olive oil, paprika, Italian seasoning, garlic powder, onion powder, salt, and black pepper until evenly coated. 4. Arrange the seasoned chicken over the potatoes. 5. In a separate bowl, whisk together the melted butter, garlic, chicken broth, Dijon mustard, and dried parsley. 6. Pour the garlic butter mixture evenly over the chicken and potatoes. 7. Cover and cook on **LOW** for 6–7 hours or **HIGH** for 3–4 hours, until the chicken is fully cooked and the potatoes are fork-tender. 8. During the last 15 minutes of cooking, sprinkle the Parmesan and mozzarella evenly over the top. 9. Cover again and cook until the cheese is melted and the sauce is rich and creamy. 10. Gently stir everything together so the chicken and potatoes are coated in the garlic Parmesan sauce. 11. Garnish with fresh parsley before serving.
