Did my son approve of my version of his recipe? 🤔 My son Yehuda is always grilling the most incredible skirt steak tacos, so this time I borrowed his marinade and turned it into the easiest sheet pan steak fajitas. Add the sliced onions and peppers to your sheet pan. Toss with the oil and seasonings. Place the elevated wire rack over the vegetables, then lay the skirt steak on top. Bake at 375°F for 25–30 minutes, then broil for about 5 minutes if you’d like extra color. While everything cooks, prepare the guacamole by mixing all the ingredients together. Slice the cooked steak into thin strips, toss it with the roasted vegetables, then fill warm tortillas with guacamole and the steak fajita mixture.
