Lightly spray a pan with olive oil and pour in the egg mixture, place the lid on the pan and leave to cook for a few minutes. Once cooked, divide into 4 pieces and set aside. 4. Lightly spray a pan with olive oil and cook kangaroo steaks for a couple of minutes each side, seasoning with salt. Set aside.    5. To assemble, lightly toast each bagel and top with slice of egg, slice of cheese, steak, onions, and 2 tbsps special sauce.    6. You can eat these fresh, or toast in a sandwich press for a few minutes.    7. Wrap in baking paper and foil, store in fridge for upto 5 days.
