Cook for 10 minutes, stirring once halfway through. 	4.	Combine & Serve: * Add the spinach and the cooked chicken back to the skillet, stir and allow to cook covered 2-3 minutes until the spinach wilts. Mix in 1 cup of freshly grated Parmesan cheese until fully melted. Adjust salt to taste. Garnish with more Parmesan and chopped parsley if desired. Serve hot!
