THE MEDITERRANEAN SAVORY YOGURT BOWL YOU HAVEN'T TRIED (BUT TOTALLY SHOULD) – WITH TOMATO CHIA PUDDING If you think yogurt bowls are just for fruit, granola, or honey, this Mediterranean savory version will change your mind. It layers creamy Greek yogurt with a tomato chia pudding, crisp veg, briny feta, a mix of olives, fresh herbs, and jammy eggs for a seriously satisfying savory breakfast. 😋 It’s fiber-rich, high-protein, and easy to meal-prep. As a GI surgeon, I also love that it’s packed with a variety of plants, which research links to a balanced microbiome and better gut health. Have you tried a savory yogurt bowl yet? Nutritional value: 16.5 g dietary fiber, 46 g protein, 280 g fruit/veggies, 13½ plant points Prep: <10 min Fridge time: >30 min Serves: 1 (4) The amount between () is for meal prepping 4 portions Ingredients: Tomato Chia Pudding: •3 (12) tbsp chia seeds •1 (4) tomato, grated (about 5.3 oz/150 g each) •1 (4) tbsp/15 (60) ml of good quality extra virgin olive oil •sea salt and freshly ground black pepper, to taste The Rest: •1 cup/254 g (4 cups/1016 g) low-fat Greek/Turkish/Bulgarian yogurt •1 boiled egg, halved •1 (4) baby (mini-Persian) cucumber, thinly sliced •2 (8) mini grape or cherry tomatoes, quartered •2 (8) radishes, thinly sliced •2 (8) tbsp mixed olives, pitted or with pit, your choice •2 (8) tbsp white middle eastern white cheese or feta, crumbled •1 (4) tbsp mixed fresh herbs, thinly sliced •drizzle of good quality extra-virgin olive oil (optional) •0.53 oz/15 g of something crunchy like nuts and seeds, or crispy za’atar flatbread Method: -Tomato chia pudding: Mix the grated tomato and olive oil until smooth and combined, and season with salt and pepper to taste. In a sealable container, mix tomato mixture with chia seeds, seal, and shake vigorously for 1 min to prevent lumps and achieve a pudding consistency. Add more olive oil if needed. To solve a texture issue, add everything to a blender, let it soak for 5 min, then blend for at least 2 min until smooth. Refrigerate for at least 30 min, preferably overnight -Assembly: Spread yogurt evenly into a bowl as the base. Spoon the chilled tomato chia pudding in the center (make a well in the yogurt). Add the egg halves, cucumber, tomatoes, radishes, olives, herbs, and cheese on top, drizzle with olive oil and season with salt and pepper. Add something crunchy and serve immediately. Tips: • Make-Ahead and Storage -Pudding: Can be stored in the fridge in an airtight container for up to 5 days -Boiled Egg: Can be stored in the fridge unpeeled for up to 1 week -Veggies: Slice preferably just before assembly for best texture and color. But they can be stored in an airtight container for up to 2 days -Cheese and olives: Can be stored in the fridge in separate airtight containers for up to 5 days -Something crunchy: Nuts/seeds can be stored in an airtight container at room temp away from heat and light for up 2 months. The crispy flatbread is best eaten the same day but can be stored in a bag or airtight container at room temp for up to 3-4 days • For Lactose-Free/Dairy-Free/Vegan Options: Use lactose-free or plant-based yogurt with live and active cultures like coconut kefir yogurt, cashew yogurt, coconut yogurt etc. Replace the cheese with lactose-free or plant-based alternatives • For Low-FODMAP Option: Use your favorite lactose-free or a plant-based yogurt. Limit chia seeds to 2 tbsp per serving. Use nuts/seeds that don’t trigger you • If the chia seeds are not thickening or gelling, they’re too old.
