A good Chinese cleaver is honestly one of the most versatile knives you can own. In reality a cleaver is multiple tools in one. You can: * Slice meat paper-thin. * Dice vegetables. * Mince garlic and ginger. * Crush garlic with the side. * Tenderize meat with the flat. * Scoop food into a wok or bowl. * Even use the spine to crack open things like lemongrass or shellfish However diving more into this; each style of cleaver can then be even more specialized as I saw meat butchers, fishmongers, vegetable owners, fruit seller & regular workers all use a cleaver but specialized for the task at hand. One very specialized cleaver is the Pian Pi Dao 片皮刀 used for Peking Duck. & it’s designed with a long, narrow, and exceptionally sharp blade with one goal: precision slicing without tearing the delicate, crispy skin. @mott32hk is one of the most celebrated Asian restaurants in the world & their AppleWood Roasted Peking Duck has been a signature of theirs since inception. 42 day dry aged, roasted, carved tableside, multiple accompaniments… it’s a lot of work for one dish. This is why they specifically teach their chefs on using the cleaver in serving this dish.
